There must be something about Fridays that leads to new creations. We are off to a friends for dinner tonight and whilst Eliah sleeps I have made a new creation.
There are three steps to this but it is really quick.
1 cup cashews
1 cup of sunflower seeds
1 cup goji berries
1/2 cup coconut nectar (or unrefined sugar)
Blend all ingredients up until you have a fine powder, then add 2 tbs of a fruit juice of your liking (I used some grapes for this).
Pat down into a dish to make a base and place in the fridge to set for 10 mins.
1tsp vanilla essence
3 fresh mint leaves
1/2 cup raisins
2 tbs coconut oil
1/2 cup coconut milk/cream
Blend this up and scoop on top of the base layer.
(I use raw chocolate for this but you could melt down some organic dark choc if you wanted)
To make the raw chocolate topping
1/2 cup cacao butter
1/2 cup cacao paste or powder
Sweeten to taste I used 3 tbs sweet freedom syrup
Melt this down over a low heat in a bowl over the water. You don’t want the water to touch the bowl. Once melted, pour on top of the cake and leave to set in the fridge for 20 mins.
