I was inspired today by a friend who posted a picture of some delicious raw ice cream and, what with the sun being out, I decided to play.
1 cup of soaked cashews (soak for 1 hour and drain)
1 cup of de-shelled hemp seeds (a great source of omegas 3 and 6, essential to brain development)
8 pitted dates
2 cups of water
2 tbs coconut oil
1/2 cup of cacao powder, or organic cocoa powder if you can’t get hold of the raw stuff
1/3 cup of lucuma (optional, makes it taste caramelly)
1 tsp vanilla
1 tbs hemp protein (optional)
Blend and then freeze for an hour. We have just sat and eaten it and it was delicious.
