I made this yesterday and my husband said this is the best dessert yet.
50g or 1/3 cup goji berries – high in beta carotene, or you can use raisins instead
50g Incan berries – good antioxidant
50g dates – good for energy
50g cashew nuts – excellent source of calcium
50g walnuts – healthy heart
50g lucuma – good for depression
60g cacao butter melted gently
Gently melt the butter over a low heat. Blend all of the other ingredients, then mix together and lay as the base of your cake. Place in fridge to set while making the topping.
80g of cacao butter gently melted
80g coconut butter – aids digestion
50g cacao powder – high in magnesium
15g purple corn – high in antioxidants
70g coconut nectar – excellent sugar substitute
1 tsp vanilla powder – good for nervous system
1 tsp reishi mushroom (optional) – immune boosting
1 tsp green super-foods mix (optional)
Gently melt the cacao butter then add all ingredients into blender and mix. This will be a runny liquid (the reishi mushrooms and lucuma give it almost a coffee taste. If you don’t have these just add a little more cacao powder, or why not try carab powder?).
Then pour liquid on top of base and leave to set for at least half an hour.
