Delicious vegan chocolate cake

Tomorrow is our wedding anniversary so we have decided to all camp in the yurt tonight and have a holiday at home. I made a delicious cake with my oldest boy Samuel, and boy is it good! Just not sure it will last till tonight.

To make the cake;
1 1/4 cups of wholemeal spelt flour (or ordinary wholemeal)
1 cup of coconut nectar
1 tsp baking powder
1/3 cup cacao powder
2tsp vanilla
1 cup of warm water
1/3 cup of coconut oil
1tsp apple cider vinegar

Mix all ingredients together, place in a baking tray and cook for 20 mins at 180.
When finished turn out to cool.

Icing;
1/2 cup coconut nectar
1/2 cup coconut oil
2 tbs coconut milk
1/3 cup raw cacao powder
1 tsp vanilla
1 tsp reishi powder
1 tsp charge mushroom powder (this gives it a coffee taste and boosts your immune system)

Blend together or whisk till fluffy.
When the cake has cooled, spread this over.
