I made these for my two boys yesterday to get some calcium rich leafy greens into them. They were a hit
Great to eat cold as a snack too for babies
As with most of my recipes you can play with this and use what you have in
Makes about 8 smallish burgers
2 potatoes – boiled so as soft and ready to add.
1 cup of quinoa- rinse and cook
Handful of kale
Handful of spinach
1/2 a leek
1 stick of celery
1 glove of garlic (optional for yogis)
Handful of coriander
Lightly sautee the garlic, leek, and celery in coconut oil preferably or olive oil till soft. Turn heat off and mix in other veg finely chopped. Mix together so they get coated in the flavour.
Blend all together and add the potatoes and quinoa and coriander. Pour into a mixing bowl and add 1/2 cup of oats. Leave to cool. Make into patties and either lightly fry or bake in the oven.
These might work in a dehydrator for the last part. Let me know if you try it
