Raw caramel, chocolate and nut bar

I had a craving for chocolate this evening so thought I would make up a new recipe. This makes a lovely layered cake bar.

Base;
1 cup cashews
1 cup of pecans
3 tbs of maple syrup or agave
1 tbs water

Blend the nuts first into a powder then add syrup and water, making a paste. Spread this out in a pan and place in the freezer for 30 mins.

Middle layer;
1 cup of dates or raisins
1 cup of water
1/2 lemon
1 tbs coconut oil
1/2 cup of coconut nectar

Pre-soak the dates and raisins in lemon juice and water for 30 mins. Strain and blend with all of other ingredients. Add date water little by little if need be to get a smooth texture. Spread this onto of the base mixture and freeze again.

Chocolate topping;
1/2 cup of raw cacao powder (or unsweetened, organic cocoa powder)
1/2 cup coconut nectar
1/2 cup coconut oil
1/2 cup cacao butter (optional)
1 tsp vanilla
1 tsp reishi mushrooms (optional)

Blend all ingredients together until creamy, then spread onto of other layers and freeze to set.
Then, slice into bars and devour.
