As winter sets in and it gets colder, there are certain dishes that make me feel good. Rice pudding was always one of them.
So tonight, after a lovely walk in the woods, I decided to make a healthy version of this old favourite. Let’s hope there is some left when my older boy ad hubby get home, me and baby have been munching away!
1 cup of short grain brown rice (great source of protein)
4 cups of coconut milk
1 tsp cinnamon
1 tbs coconut oil (great for digestion and tasty)
Mix together bring to the boil then simmer till rice is cooked, then add;
1 apple skinned, diced and puréed
1 pear skinned, diced and puréed
Pour these in at the end to sweeten.
It’s so simple and good for you. You can serve with a drizzle of raw honey on top to finish.
