Digestive Salad with Creamy Vegan Mint Dressing

Digestive Salad;
1 fennel bulb
2 large handfuls of rocket

3 artichokes
6 cherry tomatoes
1/2 a beetroot, grated
8 slices of cucumber

Finely chop the fennel into a bowl and then add the rocket, tomato, artichokes and cucumber.

1 handful of mint leaves

1/2 an avocado
4 tbs of olive oil
1 tbs of coconut sugar or maple syrup
The juice of 1/2 lemon
1 tbs of apple cider vinegar

Add all of the dressing ingredients into a food processor and blend with a pinch of Himalayan sea salt.
