Raw falafel balls – great for little fingers!

I love coming up with new recipes, these are great as a high protein snack or as part of a meal. Great for little fingers to hold – I made these when my little one was 10 months old!

1 tin of organic chick peas
1 clove of garlic
A handful of coriander
A glug of olive oil
4tbs of water
A pinch of salt
The juice of half a lemon
1/2 a sweet potato, lightly steamed
1/2 a cup of oats
1 a cup of Ground seeds (I use ground flax, pumpkin and sunflower seeds)

Stick everything other than the ground seeds into the blender and blend until smooth. Roll into ball and dip in ground seeds so that they coat it. Place on a lightly greased baking tray and place in the oven at 100 degrees, so as not to break down the enzymes, for 10 mins. Then turn off the oven and open door and leave for 10 more minutes before serving.


Spicy Lentil Soup

Spicy Lentil and Coconut Soup;
2 tbs of coconut oil
2 cloves of chopped garlic
1 leek, finely chopped
1 green chilli, chopped
1 piece of lemon grass, outer layers removed
100g red lentils, rinsed
200ml of coconut milk
The juice of half a lime

Heat the oil with the leeks, garlic, chilli and lemongrass and sauté for 5 minutes, salt to taste using Himalayan rock salt.
Add the lentils and coconut milk, along with 400 ml of water. Reduce the heat and leave to simmer for 45 minutes, or until the lentils are soft and mushy.

Remove from heat and squeeze lime into the soup.


Stay alert green smoothie

I love this recipe as it doesn’t have any fruit in it, which is great if you are trying to cut down on fruit sugars or cleanse. I add one apple to this recipe for my kids who both drank 3 cups too!

1 handful of kale leaves
1 handful of mint leaves
1 handful of parsley leaves
2 inches of ginger
1 avocado
The juice of one lemon
1/2 a cucumber
1/2 a Courgette
1 cup of hemp milk (or 2 tbs of de-shelled hemp seeds)
2 cups of water

Blend all ingredients together until smooth, then drink.

Love Punch

There are so many amazing foods out there that can support our busy lives but that can also make us feel great.
I love being at a party and serving out love punch, the perfect drink for those who don’t want to drink but still want to feel great.

Supercharge mix;

First step make a tea;
In a pan add 2 tbs damiana ground
1/2 a bag of blue lotus (blue Lilly)

Leave to simmer for 10-15 minutes, then leave to cool.

In a blender place;
2tbs of maca powder
1 tsp of reishi mushroom powder
1 tsp of lucuma
The strained and cooled tea.

This is your supercharged mix to add to your punch to give it a beautiful kick. If you have any herbal healing tea tinctures you can add them to your mix too. I love the bliss tea myself, add a tsp or two to your mix.

Punch;
Now to make your punch- my favourite combo is mixed fruit but you can be creative here!

In a blender;
3 apples, chopped
3 cups of water
1 cup of dates
1 punnet of strawberries

Once juice is tasting lovely, mix in the desired about of superfood mix, tasting as you go.
