Fresh herb tea

What better way to make the most out of your herbs. Herbs can be a brilliant medicine for many ailments, or just as a general tonic for wellbeing. Here we will make a very simple herb tea.

3 sprigs of mint – aids digestion
1 sprig of rosemary – aids mental clarity
2 sprigs of lemon balm – soothing for the mind, anti bacterial
3 chamomile flowers – calming
5 sage leaves – good for the throat
A small bunch of oregano – good for the chest

Place all of  the ingredients into a tea pot and pour in hot water (don’t put in boiling water as you do not want to damage the herbs). Leave to steep for 5-7 mins, then strain and drink.

New triple layer chocolate cake (dairy free, refined sugar free, and wheat free)

This weekend is the solstice and we are putting on our World Healing Project gathering once again. I thought it would be a good time to come up with a new recipe to mark the occasion.
It’s just setting now- I can’t wait to take a bite, it looks divine.

Base;
300g pitted dates
3 tbs dark tahini
3 tbs cacao butter or coconut butter
3 tbs dark Mediterranean carob
1/2 cup Incan berries (this gives it a great zing)

Blend until sticky and relatively smooth, then press into the base of a silicone mould and place in the fridge to set.

Caramel layer;
1 cup of pre soaked dates
2 tbs cashew butter
1 tbs tahini
1/2 cup of dried apricots (the brown ones)
3 tbs cacao butter
3 tbs maple syrup

Blend until smooth and place on top of the base layer.

Chocolate Mousse layer;
2 avocados
3 tbs cacao powder
1 tbs mucuna powder
1 tsp reishi mushroom powder
1/2 cup coconut milk
1/2 cup maple syrup or coconut sugar
1/2 cup of dates
1 cup of melted cacao butter (add at very end once mousse is smooth)

Meadowsweet

Meadowsweet is an amazing plant that has many uses, it can be found by rivers and streams and in damp areas. It always reminds me of elderflowers.

So what’s it good for?
The history of its uses have been for helping to repair the gut lining and reducing uric acid in the body (the thing that makes gout flare up) and it is rich in vitamin C, iron, calcium, magnesium and silica. It is said to help speed up the healing of connective tissue, reduce inflammation and relieve pain.
It was always used to bring a rash out such as chickenpox to speed up recovery.
These are just a few of its many uses.

Divine chocolate smoothie

This was a massive hit with the kids and grown ups;

1 punnet of strawberries
1 avocado
1 cup of greens (lettuce, kale, collards green)
2 tsp of green strengthening mix
2 tbs of cacao powder
1 cup of cooked quinoa
2 tbs of honey or coconut sugar
2 tbs of shredded coconut
1/3 cup of shelled hemp seeds
3 cups of coconut water or normal water

Blend all ingredients together and drink!
