Delicious dip

This is an amazing dip that I just made. I have used it with the kids and their veggie snacks and also inside the sushi that we just made. It was so good!

3 tbs of olive oil
1/2 cup ofpumpkin seeds
1/2 Courgette
1 garlic clove
A small handful of fresh basil
1/2 an avocado
1 handful of kale
2 tsp tamari (wheat free soy)

Blend and add a small amount of water as you go to get the right consistency,
then enjoy with veggies or as an accompaniment to a dish.

Energizing tonic smoothie

Wow, this mornings smoothie has certainly created a buzz in me!
This is perfect as a pick me up, energy boostingand immunity stimulating drink.

Tea;
1 handful of Gynostemma
1 piece of Reishi mushroom (I used a fresh piece about 4 inches in size)

Boil up and make a tea with this using 2 litres of water, you wont need to use all of it in the smoothie but can drink it over the day. Strain off 2 cups of it and leave to cool for adding into the smoothie.

Smoothie;
2 cups of tea
2 cups of nut and seed milk
1 tbs of chia seeds
1 tbs of shelled hemp seeds
1 tsp of Green Strengthening mix (or any other green superfoods mix)
1 handful of dates
1 tbs of coconut oil
1/2 an avocado
1 handful of greens (I used kale)

Blend until smooth and serve, if it’s too thick you can add more tea to it.


Vegan grain free cake

I’ve just made a lovely grain free cake.
I don’t usually make cooked cakes but the kids wanted one so here it is;

2 cups ground almonds
1 cup coconut flour
1 cup of ground seeds
2 bananas
1 cup of dates
1 cup coconut sugar
1/2 cup of melted coconut butter

Mix all of the dry ingredients in a bowl. Blend up the dates, coconut butter and the banana with 1/3 cup of water.
Pour this into the dry mix and mix together.
Place in a pan and cook in the oven at 160 for 1 hour

I then made an icing for it with;
1 cup of coconut butter
1/2 cup of coconut sugar
1/2 cup of cacao powder
1 tsp vanilla powder

Blend into a smooth paste and spread over cake once it has cooled.

Blackberry Heaven

There is nothing better than foraging with the family, we all seem to be at our happiest when picking blackberries.
So today we made a smoothie with part of our bounty which went down well with everyone.

1 cup of blackberries
1/2 cup of shelled hemp seeds
1/4 cup of pre soaked cashew nuts
2 cups of water
1/2 a banana
1 tbs raw local honey (size of this depends on sweetness of blackberries)

Blend until smooth then serve, this works great as an ice lolly too!

Divine Green Smoothie

What a delicious smoothie today!
So creamy and delicious, I had to share it with you all, it has really energized me. This is a great way to start the day as you are getting a good load of omegas and minerals to support you;

1 & 1/2 cups of hemp milk
Juice of one lemon
1 avocado
1/2 inch of tumeric root
1 inch of ginger root
1 apple
1 handful of kale
1 handful of parsley
1 banana
1/2 a cucumber
1 tsp of green strengthening mix
1 tsp of blue green algae (for added omega)

Blend until smooth then, if you like, strain through a silk bag for a smoother creamer version.
