I’ve just made a lovely grain free cake.
I don’t usually make cooked cakes but the kids wanted one so here it is;
2 cups ground almonds
1 cup coconut flour
1 cup of ground seeds
1 cup of dates
1 cup coconut sugar
1/2 cup of melted coconut butter
Mix all of the dry ingredients in a bowl. Blend up the dates, coconut butter and the banana with 1/3 cup of water.
Pour this into the dry mix and mix together.
Place in a pan and cook in the oven at 160 for 1 hour
I then made an icing for it with;
1 cup of coconut butter
1/2 cup of coconut sugar
1/2 cup of cacao powder
1 tsp vanilla powder
Blend into a smooth paste and spread over cake once it has cooled.
