This is the most delicious ice cream I have ever had… said my 10 year old son!
3 cups of young coconut flesh
1/2 cup of pre soaked cashew nuts (drained and rinsed)
1/2 cup of deshelled hemp seeded or sunflower seeds
1/2 vanilla pod
2 tbs coconut oil
1/2 cup of coconut sugar or honey
1/2 cup of water or coconut water
Blend together in a high powered blender until smooth, then place in the freezer in a container. To make it fluffy and light, stir once every few hours until set.
2 tbs cacao powder for a chocolate smoothie
A handful of mint leaves with 2 tbs cacao for mint choc
1/2 cup of dried apricots, pre soaked (use their water instead of other water) – this will make a caramel ice cream
