Shiitake Mushroom Soup

This soup is an excellent hormone balancer!

Shiitake Soup;
3 cups of shiitake mushrooms, sliced (hormone balance, immune booster)

2 Tablespoons of tamari
1/2-1 cup of extra virgin olive oil
3 Tablespoons of miso, white or brown (excellent pre and probiotic)
1 inch cube of fresh ginger root (anti-inflammatory)
1 garlic clove, peeled (anti-viral)
3 cups of hot water
1 spring onion, chopped

Directions;
Place the mushrooms in soy sauce and 3 Tablespoons olive oil. Set aside to marinate (you can also just eat the mushrooms like this by themselves or as a side dish).  Put the miso, remaining olive oil, ginger, garlic, and hot water into blender, blend until mixed.

Serving out the soup, pour the base and sprinkle each serving with marinated mushrooms (make sure you don’t have lots of the marinade, just the mushrooms) and chopped spring onions.
