Berry Mousse

berry mousse

This is so simple and delicious and a great way to use blackberries.

2 cups blackberries (or any other berry you want to use)
1 cup pre soaked and drained cashew nuts
1/2 cup coconut milk
1 tbs coconut oil
1 avocado
1 cup of dates

Place all of the ingredients in a food processor or blender and blend until smooth. Taste and, if needed, add a sweetener of your choice. Place in the fridge for 30 mins and then serve.
