Raw Blackberry Cheesecake- dairy free, gluten free and refined sugar free

This is one of my favourite recipes and it’s so simple. What’s great is that you can also make it so different by switching the fruit around. At the moment my favourite is using blackberries.

Crust;
1 cup dates, soaked until very soft
1 cup dried organic, unsweetened coconut (or you can use 1 cup of nuts or seeds)

Filling;
2 & 1/2 cups cashew nuts pre soaked for at least 1 hour
1/4 cup coconut cream
1/3 cup raw honey or maple syrup
½ cup coconut oil, softened
2 cups fresh pineapple chunks, strawberries or blackberries (depending on what type of cheesecake you want to make)

Topping;
*Using the same fruit as used in the base*
1 cup of fruit of your choice
1 cup of dates
1 tbs coconut oil

Method:

Crust;
Place soften dates and coconut in food processor and process until well blended.
Pat into the bottom of tin and place in the fridge to set

Filling;
In a high-speed blender, purée the coconut and coconut water together until smooth.
Add the honey and coconut oil. You want this to be quite smooth so blend away until it is.
Add 1 cup of the strawberries or other fruit.
Stir the fruit into the cashew cream mixture, pour over the crust and let it set in the refrigerator for 4 hours. Move to the freezer and leave until firm.

Topping;
Take your ingredients and blend until smooth. Then pour over the top of the cake and place in the freezer to set.


Natural Ways to Boost Your Families Immune System This Winter

The first thing that we can all do to boost our immune system is to look at strengthening our gut. Your gut is the bodies first line of defense against anything that enters it. But if we are not supporting it then it can’t do its job properly.

Easy ways to increase gut bacteria (and ultimately boost immunity)

  • take probiotics or probiotic foods on a regular basis such as water kefir, miso soup, kombucha and sauerkraut (make sure if you buy this that it is raw and unpasteurised). Here are some links to help you further –

  • reduce your refined sugar intake as this has a detrimental effect on the immune system and the health of the gut
  • eat foods that help reduce bad bacteria such as raw garlic (which is also an amazing natural antibiotic) and basil

Other ways to boost your Immune System

  • eat a rainbow of food so we can get a wide range of nutrients and antioxidants (why not make a smoothie for your family this way you can get a whole range of nutrients in that you normally wouldn’t be able to eat)

  • increase your Vitamin C intake naturally through the consumption of acerola cherries, rose hips and blackberries
  • add medicinal mushrooms to you and your families diets- these are immune modulators which help your immune system know when to turn on and off, a very powerful medicine. Some medicinal mushrooms are chaga, reishi, shitake, turkey tails, lions mane, to name just a few (I like making a reishi tea or using a mushroom powder in smoothies and ice lollies)
