Raw mini pizzas

I love these, they are so simple to make and are absolutely delicious.

Raw tomato sauce;
5 tomatoes
5 sundried tomatoes
1/4 cup of olive oil
1 garlic clove (unpeeled)
1/2 a red onion

Place the ingredients into a high speed blender and blend until smooth.
Place into a bowl until needed.

Raw cashew cheese;
1 cup of cashews
1/4 cup of filtered water
Juice of 1 lemon
1 garlic clove (unpeeled)
1 tbs Apple cider vinegar with the mother
2 tbs of olive oil

Place into a blender and blend until smooth, then place into a separate bowl until needed.

I love using puravida sprouted buckwheat bread for the base of my pizzas, they are delicious and store well.

Break the bread into small squares then place a dollop of tomato sauce on top, with a smaller dollop of cashew cheese on top. I like to then top with basil, avocado and sundried tomatoes.
