Raw Superfood Salad

This is a lovely salad to serve with some courgette noodles. A beautiful rainbow of colours!

Salad;
½ head of red cabbage, finely chopped
4 cups of kale
½ cup of cacao nibs
½ cup of goji berries
½ cup of incan berries

Dressing;
½ cup of olive oil

1 tbs of tamari
1 handful of fresh basil

Place the kale and cabbage into a bowl and massage for 5 mins until soft, then add in the rest of the salad ingredients.

In a blender mix the dressing ingredients and lightly blend.
Pour over the salad and mix in well. Serve.
