Raw Pad Thai

IMG_7879.JPGThis is delicious dish that will wow your friends and family. Such amazing flavours!Ingredients for Pad Thai (serves 4);
4 cups of spiralised courgettes
2 cups of shredded carrots
1 cup of shredded red cabbage
2 sliced red bell peppers
2 cups of sliced mushrooms
1 cup of bean sprouts
Half a cup of chopped coriander
1 cup of finely sliced spring onions
A thumb of ginger
Juice of one lime
Fresh mint

Place all the ingredients into a bowl and mix well.

Thai Nut Sauce;
1 cup of nut butter

½ cup of water
¼ cup of lemon juice
3-4 tbs ginger
¼ cup of honey
¼ cup of olive oil
2 small garlic cloves
1 chilli

Blend the sauce and pour over the salad above.

    Does the tai nut sauce call for fresh root or ground ginger? I’m assuming ground as the quantity would be enormous if it was fresh! x
