Raw Ice Cream Lollies

I love these ice creams on a stick that are good for you and so delicious 

Get some good silicone lollie moulds with wooden sticks 

Ice cream layer- vanilla or chocolate 

1 cup of pre soaked cashew nuts (or hulled hemp seeds) 

1 cup coconut cream 

1/2 tsp vanilla powder

1/2 cup of dates or maple syrup

2 tbs cacao powder (optional) 

Caramel Layer

1 cup of dates

1/2 cup water 

1/2 cup of nut butter (optional)

Raw Chocolate Coating

1/2 cup coconut oil melted

1/2 cup cacao butter melted (you can always just use a whole cup of coconut oil if you don’t have cacao butter)

3 Tbs cacao powder

3 Tbs coconut sugar


Place the ice cream ingredients into a high powered blender and blend till smooth. You may need to scrape down the sides a few times. 

Pour this into the moulds with the wooden sticks and leave in freezer to set

Next make the caramel layer by playing all of the ingredients into a high powered blender as above

Pour a small amount of this ontop of previous layer and freeze again 

Final stage melt the coconut oil and cacao butter at a gentle heat then take off heat and add the cacao and coconut sugar. 

Take the lollies out of the freezer and dip into the chocolate then serve and enjoy
