Chia Pudding – great source of fibre and essential fats. Makes a great breakfast or mid morning snack
3 tbs chia seeds
2 cup of nut or seed milk of choice
2 tbs coconut sugar or maple syrup
vanilla seeds (1/2 a pod) (optional)
1 tbs ground seed mix and 5 cacao beans ground up and sprinkled on top
- In a bowl place the chia seeds, vanilla and the milk, stir well and leave in the fridge for a couple of hours or overnight. In the morning stir and add the seeds and chopped fruit.
Blend in a food processor:
1 tin rinsed organic chick peas (or 1 cup of sprouted chickpeas)
1/2 cup extra virgin olive oil
2 garlic cloves
1/4 cup lemon juice
1 tsp sea salt
1 tsp black pepper
1 medium beetroot (finely chopped)
1/2 cup water
This is delicious with vegetable crudités or as a topping for crackers.
Ingredients (Makes 10 slices)
1/2 cup melted coconut oil
1/4 cup nut butter
1/4 cup carob powder
1/4 cup maple syrup
(supercharge with a handful of dried berries & 1 tsp maca)
Mix all ingredients in a bowl and pour into a mould. Place in the fridge or freezer for
30 minutes. Defrost for a minute or two before enjoying.
